Quinoa Berry Breakfast
Quinoa is high in protein and essential amino acids, making it an excellent choice to fuel your body in the morning. This quinoa porridge is a great alternative to traditional oatmeal.

- 1 cup quinoa
- 2 cups water
- ¼ cup chopped walnuts
- 1 tsp. ground cinnamon
- 1 cup raspberries
- 1 cup blueberries
- ¼ cup plain low-fat Greek yogurt
- Rinse quinoa in fine-mesh sieve before cooking. Place quinoa, water, walnuts, and cinnamon in a 1½-quart saucepan; bring to a boil. Reduce heat to low; cover and cook 15 minutes or until all water has been absorbed.
- Add berries and top each serving with 1 Tbsp. yogurt.
