Quinoa "Burrito" Bowls

Ingredients

  • 1 rotisserie chicken, shredded
  • 4 cups Simple Truth Organic™ Quinoa, prepared
  • 1 package Simple Truth™ Shredded Mexican Style Cheese Blend
  • 1 can Simple Truth Organic™ Black Beans, drained and warmed
  • 2 tomatoes
  • 1 container sour cream
  • 1 avocado
  • 1 head lettuce, chopped
  • 1 bunch fresh cilantro
  • 1 jar salsa
  • Fresh lime wedges, for garnish

Directions

  • In serving bowls, layer quinoa, chicken, cheese, black beans, tomatoes, sour cream, lettuce, avocado and salsa. Garnish with sour cream, cilantro and lime wedges.
  • To serve family style, create a buffet by arranging each ingredient in individual bowls.
