Quinoa Caprese Bowl
This simple and healthy bowl is perfect for warm summer evenings or when you’re craving a light and refreshing lunch. This dish is also delicious topped with grilled chicken.

- 1 cup cooked quinoa
- ½ cup mozzarella balls
- ½ cup cherry tomatoes
- ¼ cup chopped fresh basil
- 3 Tbsp. Italian dressing
- Place quinoa in a bowl. Top with mozzarella, tomatoes, and basil. Drizzle with Italian dressing and serve.
