This grain is cooked the same way rice is cooked. Feel free to add other ingredients such as sun dried tomatoes and shredded zucchini for more texture and flavor.

- ¼ cup unsalted butter
- ½ cup diced onion
- 1 red bell pepper, stemmed, seeded and diced
- 1 cup quinoa
- 1½ cups chicken broth
- ½ tsp. salt
- ¼ tsp. white pepper
- 1 bay leaf
- 2 Tbsp. fresh parsley, chopped
- Preheat oven to 350°F.
- Melt butter in a saucepan and sauté the onion until tender. Add the red pepper and quinoa and sauté for 3–5 minutes.
- Pour mixture into a baking dish, add chicken broth, salt, pepper, and bay leaf and stir to incorporate. Cover and bake for 45 minutes. Remove bay leaf and top with parsley before serving.
