Quinoa Pilaf

This grain is cooked the same way rice is cooked. Feel free to add other ingredients such as sun dried tomatoes and shredded zucchini for more texture and flavor.

Ingredients

  • ¼ cup unsalted butter
  • ½ cup diced onion
  • 1 red bell pepper, stemmed, seeded and diced
  • 1 cup quinoa
  • 1½ cups chicken broth
  • ½ tsp. salt
  • ¼ tsp. white pepper
  • 1 bay leaf
  • 2 Tbsp. fresh parsley, chopped

Directions

  • Preheat oven to 350°F.
  • Melt butter in a saucepan and sauté the onion until tender. Add the red pepper and quinoa and sauté for 3–5 minutes.
  • Pour mixture into a baking dish, add chicken broth, salt, pepper, and bay leaf and stir to incorporate. Cover and bake for 45 minutes. Remove bay leaf and top with parsley before serving.
