Raisin Muffins
If you want to dissolve the sugar in the raisins, you can soak them in water for about an hour.

Ingredients
- 2 cups oat bran
- ¼ cup brown sugar
- 1 Tbsp. baking powder
- 2 egg whites
- 1 cup low-fat buttermilk
- ½ cup molasses
- ½ cup unsweetened applesauce
- ¾ cup raisins
Directions
- Preheat oven to 450°F. Spray a muffin tin with nonstick cooking spray.
- Mix the oat bran, brown sugar, and baking powder in a large bowl. In another bowl, beat egg whites until foamy; stir in buttermilk and molasses. Add the buttermilk mixture to the oat bran mixture, then fold in the applesauce and raisins.
- Pour an equal amount of batter into 6 cups the prepared muffin tin. Bake until tops are golden, about 20 minutes. Allow to cool slightly before serving.
