Raisin Muffins

If you want to dissolve the sugar in the raisins, you can soak them in water for about an hour.

Ingredients

  • 2 cups oat bran
  • ¼ cup brown sugar
  • 1 Tbsp. baking powder
  • 2 egg whites
  • 1 cup low-fat buttermilk
  • ½ cup molasses
  • ½ cup unsweetened applesauce
  • ¾ cup raisins

Directions

  • Preheat oven to 450°F. Spray a muffin tin with nonstick cooking spray.
  • Mix the oat bran, brown sugar, and baking powder in a large bowl. In another bowl, beat egg whites until foamy; stir in buttermilk and molasses. Add the buttermilk mixture to the oat bran mixture, then fold in the applesauce and raisins.
  • Pour an equal amount of batter into 6 cups the prepared muffin tin. Bake until tops are golden, about 20 minutes. Allow to cool slightly before serving.
