Raspberry Thyme Vinaigrette
This vinaigrette makes a lovely summer salad dressing, and it’s also good for marinating chicken or fish.

Ingredients
- 1⁄2 pint fresh raspberries
- 1⁄2 cup rice wine vinegar
- 1⁄2 cup olive oil
- 2 tsp. chopped fresh thyme
- 1 Tbsp. finely diced shallot
- 1⁄4 cup honey
- 1 tsp. poppy seeds
- 2 tsp. Dijon mustard
- 1 tsp. kosher salt
- 1⁄4 tsp. ground ginger
Directions
- Place all ingredients in a blender and process until smooth. Refrigerate for at least 20 minutes to allow flavors to meld.
