Raspberry Thyme Vinaigrette

This vinaigrette makes a lovely summer salad dressing, and it’s also good for marinating chicken or fish.

Ingredients

  • 1⁄2 pint fresh raspberries
  • 1⁄2 cup rice wine vinegar
  • 1⁄2 cup olive oil
  • 2 tsp. chopped fresh thyme
  • 1 Tbsp. finely diced shallot
  • 1⁄4 cup honey
  • 1 tsp. poppy seeds
  • 2 tsp. Dijon mustard
  • 1 tsp. kosher salt
  • 1⁄4 tsp. ground ginger

Directions

  • Place all ingredients in a blender and process until smooth. Refrigerate for at least 20 minutes to allow flavors to meld.
