Raw Caramel Sauce
This rich and creamy sauce is perfect for a fondue party. Serve alongside chocolate fondue for a healthier dipping sauce for apples, bananas, graham crackers, marshmallows, brownie bites, and even assorted cheeses. This sauce is perfect for dipping, but if a thinner sauce is required—for pouring over a cake or ice cream, for example—add more date water until desired consistency is reached.

- 8 Medjool dates, pitted
- 1 cup water
- 1 Tbsp. coconut butter
- ⅓ cup plus 1 Tbsp. maple syrup
- 1½ tsp. vanilla extract
- In a small bowl, soak dates in the water for 30 minutes. Transfer dates to a food processor, reserving the soaking liquid.
- Add coconut butter to the dates and process until a soft paste forms. Add the maple syrup and 2 tablespoons of the date soaking water a little at a time, and process until blended. Add vanilla and pulse until smooth.
