Raw Carrot Ginger Soup

This is a colorful soup rich in antioxidants and phytonutrients. The pine nuts make it creamy and smooth, but you can also achieve this effect with cashews or young coconut meat.

  • 1 cup carrot juice
  • 1 cup chopped cucumber
  • ½ cup pine nuts
  • 2 Tbsp. fresh chopped cilantro
  • 1 Tbsp. fresh grated ginger
  • ½ cup shredded carrots


  • In a blender, add the carrot juice, cucumber, pine nuts, cilantro, and ginger and blend until smooth.
  • Garnish with the shredded carrots and serve cold.
