Raw Carrot Ginger Soup
This is a colorful soup rich in antioxidants and phytonutrients. The pine nuts make it creamy and smooth, but you can also achieve this effect with cashews or young coconut meat.

- 1 cup carrot juice
- 1 cup chopped cucumber
- ½ cup pine nuts
- 2 Tbsp. fresh chopped cilantro
- 1 Tbsp. fresh grated ginger
- ½ cup shredded carrots
- In a blender, add the carrot juice, cucumber, pine nuts, cilantro, and ginger and blend until smooth.
- Garnish with the shredded carrots and serve cold.
