Red Berry Chia Seed Pudding

  • ¼ cup chia seeds
  • 1 cup coconut milk
  • 1 Tbsp. pure maple syrup
  • ¼ cup raspberry jam
  • 2 Tbsp. water
  • ½ cup berries

Directions

  • In a medium bowl, stir together chia seeds, coconut milk, and 1 tablespoon syrup. Refrigerate for 15 minutes and allow to thicken.
  • In a microwave-safe bowl, cook jam and water for 20 seconds. Stir until combined. Spoon jam into the bottom of two bowls. Top with chia seed pudding and berries.
