Red Berry Chia Seed Pudding
Raspberry jam sweetens coconut pudding in this simple, beautiful bowl. Enjoy this dish for breakfast or serve as dessert. It’s perfect for both!

- 1⁄4 cup chia seeds
- 1 cup coconut milk
- 1 Tbsp. pure maple syrup
- 1⁄4 cup raspberry jam
- 2 Tbsp. water
- 1⁄2 cup berries
- In a medium bowl, stir together chia seeds, coconut milk, and 1 tablespoon syrup. Refrigerate for 15 minutes and allow to thicken.
- In a microwave-safe bowl, cook jam and water for 20 seconds. Stir until combined. Spoon jam into the bottom of two bowls. Top with chia seed pudding and berries.
