Red Onion Lemon Dressing
Serve over your favorite greens, pasta salad, grains, or vegetables. This dressing is also good for marinating blanched green beans, beets, cucumbers, or carrots.

- 2 Tbsp. lemon juice
- 1⁄4 cup minced red onion
- 1⁄2 cup olive oil
- 1 clove garlic, peeled and minced
- 1⁄4 cup chopped mixed herbs (parsley, basil, thyme, or savory)
- 1⁄8 tsp. salt
- In a blender or food processor, mix all ingredients together. If marinating blanched vegetables, allow vegetables to sit at room temperature for 1 hour to allow flavors to combine.
