Red Onion Lemon Dressing

Serve over your favorite greens, pasta salad, grains, or vegetables. This dressing is also good for marinating blanched green beans, beets, cucumbers, or carrots.

  • 2 Tbsp. lemon juice
  • 1⁄4 cup minced red onion
  • 1⁄2 cup olive oil
  • 1 clove garlic, peeled and minced
  • 1⁄4 cup chopped mixed herbs (parsley, basil, thyme, or savory)
  • 1⁄8 tsp. salt


  • In a blender or food processor, mix all ingredients together. If marinating blanched vegetables, allow vegetables to sit at room temperature for 1 hour to allow flavors to combine.
