Red Pepper Coulis
Coulis can be made using any fruit or vegetable. To add variety, experiment with the addition of herbs and spices. Use this sauce with fried cheese, grilled or roasted lamb, beef, or chicken.

- 1 jar (16 oz.) roasted red peppers, drained and diced
- 1 tsp. olive oil
- 1 1⁄2 tsp. salt
- 1⁄2 tsp. ground black pepper
- Place roasted peppers and oil in a food processor and purée until smooth. Season with salt and black pepper.
