Rhubarb Watermelon Vinaigrette
Tired of the same old salad? Kick it up a notch with the punch of this rhubarb-laden vinaigrette.

- 1 cup chopped rhubarb
- 1 cup cubed watermelon
- 2 Tbsp. sugar
- 1 tsp. grated lemon zest
- 1⁄3 tsp. sea salt
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. vegetable oil
- Place rhubarb, watermelon, and sugar in a small bowl. Cover and allow to macerate for 1 hour.
- Add all ingredients to a food processor and pulse until smooth.
