Rice Cooker Stuffed Tomatoes

Replace the tomatoes with red or green bell peppers and make stuffed peppers when you wish.

  • 2 Tbsp. extra-virgin olive oil
  • 1 medium onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 1⁄4 tsp. ground black pepper
  • 1⁄2 lb. ground beef
  • 3 Tbsp. water
  • 1 Tbsp. minced fresh basil
  • 1⁄4 cup plus 1 tsp. grated Parmesan cheese
  • 4 large tomatoes


  • Add the oil to the rice cooker pot, cover, and set to Cook. When the base of the pot gets warm, add the onions and sauté for about 2 minutes or more, until onions become soft. Add garlic and pepper, and sauté the mixture for 2 minutes.
  • Add the ground beef (break up into smaller bits) and cook for 3 minutes until uniformly browned.
  • Add the water, mix well, cover the rice cooker, and allow to cook for about 8 minutes. When mixture bubbles vigorously, switch to Warm and continue to cook for 8 more minutes, or until beef cooks through.
  • Lift the rice cooker lid, mix the basil and 1⁄4 cup Parmesan with the beef mixture. Dish out and set aside.
  • Cut the top off each tomato and scoop out the flesh. Spoon the beef mixture into the tomatoes. Place the top back on and sprinkle with remaining 1 teaspoon Parmesan.
  • Wipe out the rice cooker, add a dash of oil to the bottom and set to Cook. Place in stuffed tomatoes, cover and cook for 10 minutes. Serve warm.
