This recipe is great for times when you want more than plain rice for a side dish. It is also good as a bed for stewed dishes.

- 8 Tbsp. unsalted butter
- ½ cup diced onion
- 1 cup long-grain rice
- 12 oz. low-sodium chicken broth
- ½ tsp. salt
- ¼ tsp. ground white pepper
- 1 bay leaf
- Preheat oven to 350°F.
- In a saucepan over medium heat, melt butter. Sauté the onion in butter until tender. Add rice; sauté for 3–5 minutes with the onion.
- Pour rice mixture into a 9" x 13" baking dish. Add chicken broth, salt, pepper, and bay leaf. Stir to incorporate. Cover and bake for 45 minutes. Remove bay leaf before serving.
