Rice Pilaf

This recipe is great for times when you want more than plain rice for a side dish. It is also good as a bed for stewed dishes.

  • 8 Tbsp. unsalted butter
  • 1⁄2 cup diced onion
  • 1 cup long-grain rice
  • 12 oz. low-sodium chicken broth
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. ground white pepper
  • 1 bay leaf


  • Preheat oven to 350°F.
  • In a saucepan over medium heat, melt butter. Sauté the onion in butter until tender. Add rice; sauté for 3 to 5 minutes with the onion.
  • Pour rice mixture into a 9-by-13-inch baking dish. Add chicken broth, salt, pepper, and bay leaf. Stir to incorporate. Cover and bake for 45 minutes. Remove bay leaf before serving.
