Rice Pudding for a Crowd

  • 3 quarts milk
  • 4 cups water
  • 3 cups long-grain white rice
  • 1 tsp. salt
  • 3 large eggs, beaten
  • 3 cups sugar
  • 2 tsp. vanilla extract
  • 1 tsp. ground cinnamon


  • In a large pot, combine the milk and water, and heat until warm. Add the rice and salt and bring to a boil. Lower heat. Simmer until rice is tender, about 25 minutes
  • In a bowl, combine the eggs, sugar, and vanilla and mix well. Pour in the egg mixture into the pot with the rice. Stir a few times. Turn off the heat and let stand for 5 minutes.
  • Add cinnamon before serving. Serve warm or cold.
