Rich Chocolate Cake

Ingredients

  • 2½ cups white spelt flour
  • 1¾ cups coconut sugar
  • ⅓ cup dark cocoa powder
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. sea salt
  • 1¾ cups cold water
  • 2½ tsp. vanilla extract
  • ⅔ cup melted butter
  • 2 Tbsp. apple cider vinegar

Directions

  • Preheat oven to 350°F. Line two 9" cake pans with parchment paper and spray with cooking spray.
  • In a large bowl, combine the flour, sugar, cocoa, baking powder, baking soda, and salt until thoroughly combined. Add water, vanilla, butter, and vinegar. Stir until just combined.
  • Pour into prepared pans and bake for 30 minutes, until a toothpick inserted in center comes out clean. Cool for 30 minutes in the pans before removing.
