Rich and Fluffy Cornbread

Ingredients

  • ¾ cup yellow cornmeal
  • ⅔ cup all-purpose flour
  • ¼ cup sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ⅔ cup 2% milk
  • ½ cup whipping cream
  • 1 egg yolk
  • 6 Tbsp. unsalted butter, melted
  • 2 egg whites
  • cooking spray

Directions

  • Preheat oven to 425°F. Combine cornmeal, flour, sugar, baking powder, and salt in a large bowl.
  • Mix milk, cream, and egg yolk in another bowl. Whisk in melted butter. Add dry ingredients. Gently mix together and do not overmix.
  • Whip egg whites until stiff peaks form. Fold into batter using a rubber spatula. Pour batter into a greased 8" square baking pan. Bake 20 minutes or until toothpick inserted in center comes out clean. Cut into squares.
