Roasted Artichoke Hearts
Artichokes, Greek yogurt and fresh herbs come together for a high-fiber holiday side dish that’s easy to make.

Ingredients
- 24 oz. frozen artichoke hearts
- 3 tbsp. olive oil
- 1⁄2 tsp. sea salt, for roasting
- 1⁄8 tsp. sea salt, for sauce
- 1⁄2 cup plain Greek yogurt
- 1 tbsp. fresh dill, chopped
- 1 tbsp. flat-leaf parsley, chopped
- 1⁄2 tsp. lemon zest
- 1⁄4 tsp. minced garlic
Directions
- Heat oven to 345°F and line a rimmed baking pan with parchment paper.
- Toss artichokes with oil and ½ teaspoon salt. Spread in a single layer on the baking pan.
- Roast for 22-25 minutes or until golden brown.
- In a small bowl, stir together yogurt, herbs, lemon, garlic and remaining ⅛ teaspoon salt.
- Serve artichokes with yogurt sauce.
- Refrigerate leftovers.
