Roasted Artichoke Hearts

Artichokes, Greek yogurt and fresh herbs come together for a high-fiber holiday side dish that’s easy to make.

Ingredients

  • 24 oz. frozen artichoke hearts
  • 3 tbsp. olive oil
  • 1⁄2 tsp. sea salt, for roasting
  • 1⁄8 tsp. sea salt, for sauce
  • 1⁄2 cup plain Greek yogurt
  • 1 tbsp. fresh dill, chopped
  • 1 tbsp. flat-leaf parsley, chopped
  • 1⁄2 tsp. lemon zest
  • 1⁄4 tsp. minced garlic

Directions

  • Heat oven to 345°F and line a rimmed baking pan with parchment paper.
  • Toss artichokes with oil and ½ teaspoon salt. Spread in a single layer on the baking pan.
  • Roast for 22-25 minutes or until golden brown.
  • In a small bowl, stir together yogurt, herbs, lemon, garlic and remaining ⅛ teaspoon salt.
  • Serve artichokes with yogurt sauce.
  • Refrigerate leftovers.
