Roasted Cherry Tomatoes
Roasting tomatoes brings out their natural sweet flavor.

- 2 Tbsp. olive oil
- 1 pint cherry tomatoes, sliced in half
- 4 garlic cloves, smashed, peeled, and finely chopped
- ¼ tsp. salt
- ⅛ tsp. pepper
- Preheat oven to 400°F. Lay a piece of aluminum foil on a large baking sheet. Rub the olive oil over the foil.
- Lay the tomato halves on the aluminum foil. Sprinkle the salt, pepper, and chopped garlic over the tomatoes. Roast the tomatoes for 30 minutes or until the outside edges are blackened. Let cool and serve.
