Roasted Diced Potatoes

Feel free to make these potatoes with the peel on. They’ll be rustic and nutritious.

  • 5 lbs. russet potatoes, peeled and cut into 1" pieces
  • 3 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1½ tsp. salt, divided
  • ⅛ tsp. ground black pepper


  • Preheat oven to 400°F. Place potatoes in and even layer in a large roasting pan. Drizzle with olive oil and sprinkle with garlic powder, onion powder, 1 teaspoon salt, and pepper. Toss with hands until potatoes are coated with oil and seasonings.
  • Bake, uncovered, for 30 minutes. Using a spatula, turn the potatoes and arrange in and even layer. Bake for 35 minutes longer, or until potatoes are tender and brown at the edges. Sprinkle with remaining salt and serve immediately.
