Roasted Fingerling Potatoes with Garlic
For a lively dish, mix red, white, and purple fingerling potatoes together.

- 5 lbs. fingerling potatoes
- 1⁄3 cup olive oil
- 6 cloves garlic
- 3 sprigs rosemary
- Salt and pepper to taste
- Scrub fingerling potatoes. Trim obvious blemishes, but do not peel.
- Place potatoes, garlic, and rosemary in a bowl or baking dish. Drizzle with olive oil and toss to coat.
- Sprinkle salt and pepper over mixture and place in a shallow baking dish. Bake at 350ºF for 30 minutes, or until tender.
