Roasted Fingerling Potatoes with Garlic

For a lively dish, mix red, white, and purple fingerling potatoes together.

  • 5 lbs. fingerling potatoes
  • 1⁄3 cup olive oil
  • 6 cloves garlic
  • 3 sprigs rosemary
  • Salt and pepper to taste


  • Scrub fingerling potatoes. Trim obvious blemishes, but do not peel.
  • Place potatoes, garlic, and rosemary in a bowl or baking dish. Drizzle with olive oil and toss to coat.
  • Sprinkle salt and pepper over mixture and place in a shallow baking dish. Bake at 350ºF for 30 minutes, or until tender.
