Roasted Garlic and Red Pepper Hummus
Use sweet potato chips to dip for an extra treat!

- 2 cloves roasted garlic
- 2 cups cooked (without salt or fat) chickpeas, drained
- 1⁄3 cup tahini
- 1⁄3 cup lemon juice
- 1⁄2 cup chopped roasted red peppers
- 1⁄4 tsp. dried basil
- In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, roasted red peppers, and basil. Process until the mixture is smooth.
- Transfer to a covered bowl and chill until ready to serve.
