Roasted Garlic Salad Dressing

If you think that fresh, raw garlic is too strong, try this. Roasted garlic is smoother and milder than fresh. You can also add fresh or dried herbs to this dressing for flavor variations.

  • 2 cloves roasted garlic, squeezed from their paper
  • 3⁄4 cup olive oil
  • 1⁄2 tsp. dry mustard
  • 1 slice (1⁄4 inch) lemon with peel, seeded
  • 1⁄2 tsp. sugar
  • 1⁄2 tsp. salt
  • 1⁄4 cup white wine vinegar


  • Mix all ingredients in the blender. Store in refrigerator for future use. This should keep for up to a week.
