Roasted Pistachios

Roasting your own pistachios lets you avoid salt on the nuts, which makes them a snack that perfectly matches your Paleo palate.

  • 1 lb. raw pistachios
  • 2 Tbsp. almond oil


  • Add the nuts and oil to a 2-quart slow cooker. Stir to combine. Cover and cook on low for 1 hour.
  • Stir the mixture again. Cover and cook for 2 more hours, stirring the mixture again after 1 hour. Cool and store in an airtight container.
