Roasted Potatoes with Rosemary

You can also roast russet potatoes with this method. Just cut into large chunks and roast for 55 to 65 minutes.

  • 2 lbs. red new potatoes, sliced
  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 2 Tbsp. fresh rosemary, minced
  • ½ tsp. salt
  • ½ tsp. cracked black pepper
  • 1 Tbsp. butter


  • Preheat oven to 375°F. In a large baking dish, toss the potatoes with the oil, garlic, rosemary, salt, and pepper. Bake until the potatoes are tender when pierced with a fork, about 40 to 50 minutes, stirring potatoes once during cooking time. Toss with butter and serve immediately.
