Roasted Pumpkin Seeds
When making pumpkin, don’t throw away the seeds. Use them for roasting—so delish!

- 1 cup pumpkin seeds, rinsed and dried
- 1 Tbsp. olive oil
- 1⁄2 tsp. salt
- Preheat oven to 300°F. Line a rimmed baking sheet with parchment paper.
- In a medium bowl, toss together all ingredients. Spread mixture in a single layer on baking sheet.
- Bake 50 minutes, stirring every 15 minutes until seeds are crisp. Let cool completely before serving. Store at room temperature.
