Roasted Red Bell Pepper Purée

  • 1 jar (12 oz.) roasted red bell peppers, chopped
  • 1 Tbsp. tomato paste
  • Zest and juice of 1 lemon
  • 2 Tbsp. extra-virgin olive oil
  • 1 tsp. salt
  • 1⁄2 tsp. ground black pepper


  • Combine all ingredients in a food processor or blender. Purée until smooth. Heat in a saucepan before serving.
