Roasted Tomato Marinara Dip
This dip is wonderful because it is also very versatile. It can be used as a dip or even as a sauce to garnish pasta, steamed vegetables, steak, or pork chops.

- 1 can (14.5 oz.) fire-roasted tomatoes
- 2 cloves garlic, crushed
- 1 tsp. red pepper flakes
- 1 Tbsp. parsley flakes
- ¼ tsp. lemon juice
- ½ Tbsp. anchovy paste
- ½ Tbsp. extra virgin olive oil
- ½ tsp. salt
- ¼ tsp. black pepper
- Heat all ingredients in saucepan and cook over low heat for about 5 minutes or until well blended. Add salt and pepper to taste. Remove from heat, and serve hot.
