Roasted Tomatoes

Use these smoky and flavorful tomatoes in your favorite salsa recipe.

Ingredients

  • 2 lbs. plum tomatoes
  • 2 Tbsp. olive oil
  • 1 tsp. salt
  • ⅛ tsp. ground black pepper
  • 1 pint cherry tomatoes
  • 4 cloves garlic, minced

Directions

  • Preheat oven to 400°F. Cut plum tomatoes in half and place, cut side up, on baking pan. Drizzle with olive oil and sprinkle with salt and pepper. Bake tomatoes at 400°F for 15 minutes.
  • Remove pan from oven and add cherry tomatoes and minced garlic to plum tomatoes; toss gently. Return to oven and bake for another 15 minutes or until all tomatoes are brown around the edges. Serve immediately or cover and refrigerate up to 3 days.
