- 2 lbs. plum tomatoes
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1⁄8 tsp. ground black pepper
- 1 pint cherry tomatoes
- 4 cloves garlic, minced
- Preheat oven to 400°F. Cut plum tomatoes in half and place, cut side up, on baking pan. Drizzle with olive oil and sprinkle with salt and pepper. Bake tomatoes at 400°F for 15 minutes.
- Remove pan from oven and add cherry tomatoes and minced garlic to plum tomatoes; toss gently. Return to oven and bake for another 15 minutes or until all tomatoes are brown around the edges. Serve immediately or cover and refrigerate up to 3 days.
