Roasted Tomatoes with Bright Herbs
The tomatoes in this recipe become so concentrated and sweet that even winter tomatoes end up tasting good! Serve on slices of toasted baguette.

Ingredients
- 5 medium tomatoes, cored and sliced
- 4 cloves garlic
- 2 bay leaves
- 1 Tbsp. minced oregano
- 1 Tbsp. minced thyme
- 1⁄4 cup olive oil
- 1⁄2 tsp. salt
Directions
- Preheat the oven to 450°F and lightly spray a 9-by-13-inch casserole dish with nonstick spray.
- Toss the tomatoes, garlic, bay leaves, oregano, thyme, olive oil, and salt together in a large bowl. Pour the mixture into the prepared casserole dish and spread out evenly.
- Roast, uncovered, until the tomatoes release their juices and become very soft, about 2 hours.
