Roasted Tomatoes with Bright Herbs

The tomatoes in this recipe become so concentrated and sweet that even winter tomatoes end up tasting good! Serve on slices of toasted baguette.

Ingredients

  • 5 medium tomatoes, cored and sliced
  • 4 cloves garlic
  • 2 bay leaves
  • 1 Tbsp. minced oregano
  • 1 Tbsp. minced thyme
  • ¼ cup olive oil
  • ½ tsp. salt

Directions

  • Preheat the oven to 450°F and lightly spray a 9" × 13" casserole dish with nonstick spray.
  • Toss the tomatoes, garlic, bay leaves, oregano, thyme, olive oil, and salt together in a large bowl. Pour the mixture into the prepared casserole dish and spread out evenly.
  • Roast, uncovered, until the tomatoes release their juices and become very soft, about 2 hours.
