Roasted Zucchini and Squash
Both yellow squash and zucchini are summer squashes. Unlike winter squashes, these can be eaten raw.

- 3 zucchini
- 3 yellow squash
- 1⁄2 tsp. all-purpose seasoning
- Slice vegetables into thin rounds. Coat a cookie sheet with nonstick spray. Lay veggie rounds on cookie sheet, being careful not to crowd them.
- Sprinkle with all-purpose seasoning. Bake in 375°F oven for 16 minutes, flipping once.
