Rosemary and Garlic-Glazed Leg of Lamb

Ingredients

  • 1 boneless leg of lamb (3½ 4 lbs.), rolled and tied
  • ⅓ cup dry sherry
  • ⅓ cup water
  • 2 Tbsp. soy sauce
  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp. paprika
  • 2 tsp. chopped fresh rosemary

Directions

  • Combine sherry, water, soy sauce, oil, garlic, paprika, and rosemary in a small bowl. Place the lamb on a rack in a shallow roasting pan, brush with the glaze. Roast 2¾ to 3 hours, brushing about every 20 minutes with the glaze.
