Salmon Cobb Salad

Ingredients

  • 4 oz. Superior Fresh Atlantic salmon fillet, skinned, qty. 2
  • 6 oz. Superior Fresh "Better Butter Blend" Organic Chopped Salad
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 6 oz. bacon, cooked and crumbled
  • 4 hard boiled eggs, sliced
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 2 tbsp. canola oil
  • 1⁄4 cup dijon mustard
  • 4 tbsp. honey
  • 1⁄4 cup apple cider vinegar
  • 1⁄4 cup extra virgin olive oil
  • 2 tbsp. capers
  • 2 sprigs fresh thyme
  • 1⁄4 tsp. black pepper

Directions

  • Mix dijon mustard, honey, apple cider vinegar, olive oil, lemon juice, capers, thyme and black pepper until fully blended, makes about 1 cup.
  • Cook bacon at 400° for 15 minutes or until done to desired crispiness.
  • Season salmon fillets with salt, pepper, garlic powder, onion powder and heat canola oil in a cast iron skillet.
  • Sear salmon fillets for 4 minutes, flip and cook an additional 2 minutes or until flesh is just translucent.
  • Plate salad greens and layer on tomatoes, avocado, bacon and hard boiled eggs. Top with salmon fillet and honey mustard dressing.
