Salmon Cobb Salad

Ingredients
- 4 oz. Superior Fresh Atlantic salmon fillet, skinned, qty. 2
- 6 oz. Superior Fresh "Better Butter Blend" Organic Chopped Salad
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 6 oz. bacon, cooked and crumbled
- 4 hard boiled eggs, sliced
- 1⁄2 tsp. salt
- 1⁄2 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 2 tbsp. canola oil
- 1⁄4 cup dijon mustard
- 4 tbsp. honey
- 1⁄4 cup apple cider vinegar
- 1⁄4 cup extra virgin olive oil
- 2 tbsp. capers
- 2 sprigs fresh thyme
- 1⁄4 tsp. black pepper
Directions
- Mix dijon mustard, honey, apple cider vinegar, olive oil, lemon juice, capers, thyme and black pepper until fully blended, makes about 1 cup.
- Cook bacon at 400° for 15 minutes or until done to desired crispiness.
- Season salmon fillets with salt, pepper, garlic powder, onion powder and heat canola oil in a cast iron skillet.
- Sear salmon fillets for 4 minutes, flip and cook an additional 2 minutes or until flesh is just translucent.
- Plate salad greens and layer on tomatoes, avocado, bacon and hard boiled eggs. Top with salmon fillet and honey mustard dressing.
