Salmon Sushi Stacks

Ingredients
- 4 (2.5 oz.) salmon fillets
- 2 tablespoons olive oil
- 1⁄4 teaspoon salt
- 1⁄2 cup mayonnaise
- 1 tablespoon sriracha
- 1 teaspoon soy sauce
- 3⁄4 cup sushi rice, prepared according to package instructions
- 1⁄4 avocado, chopped
- 1⁄4 cup red onion, chopped
- 1⁄4 cup mango, chopped
- 1 Persian cucumber, quartered and sliced
- 1 tablespoon lime juice
Directions
- Preheat oven to 375°F. Prepare baking sheet with parchment paper.
- On prepared pan, arrange salmon; drizzle with olive oil and rub with salt. Bake 12-15 minutes, until opaque. Using fork, flake salmon; set aside.
- In small bowl, combine mayonnaise, sriracha and soy sauce. Refrigerate until ready to use.
- In medium bowl, combine avocado, red onion, mango, cucumber and lime juice.
- Using dry measuring cup, evenly layer avocado salad, flaked salmon and rice. Run butter knife around measuring cup, place a small plate on top of cup, then invert stack onto plate. Remove measuring cup; drizzle on spicy mayonnaise. Repeat with remaining ingredients.
