Salmon with Balsamic Strawberries
A light and zesty addition to your grilled salmon that’s perfect for summer.

Ingredients
- 4 salmon fillets (6 oz. each), skin removed
- 1 1⁄2 cups strawberries
- 1⁄2 cup balsamic vinegar
- 4 tablespoons Simple Truth Organic™ Homestyle Orange Juice
- 1 tablespoon Simple Truth Organic™ Extra Virgin Olive Oil
Directions
- Clean, hull and slice the strawberries in half. In a small bowl, combine the strawberries, vinegar and orange juice. Let stand for 15 minutes.
- Brush a grill pan with olive oil and heat pan (or skillet) over medium-high heat until very hot. Season both sides of the salmon with salt and pepper. Add the fish to the pan and cook for 4 minutes on one side. Turn and cook for 4 minutes more, or until salmon flakes easily.
- Transfer the salmon to plates.
- Using a slotted spoon, remove the strawberries from the vinegar and spoon over the salmon. Discard the remaining vinegar and serve immediately.
