Salsa Fresca (Pico de Gallo)

Serve pico de gallo with tortilla chips, tacos, or fajitas.

  • 1 1⁄2 cups finely diced tomatoes
  • 1 small white onion, finely chopped
  • 1 medium jalapeño pepper, seeded and finely chopped
  • 1 Tbsp. puréed chipotle in adobo
  • 1⁄2 tsp. salt
  • 2 tsp. lime juice
  • 1⁄4 cup chopped cilantro


  • In a blender or food processor, purée one-third of the tomatoes.
  • In a medium bowl, combine tomato purée with remaining tomatoes, onions, jalapeños, chipotle, salt, lime juice, and cilantro. Best if used within 2 days.
