Salsa Fresca (Pico de Gallo)

Ingredients
- 1 1⁄2 cups finely diced tomatoes
- 1 small white onion, finely chopped
- 1 medium jalapeño pepper, seeded and finely chopped
- 1 Tbsp. puréed chipotle in adobo
- 1⁄2 tsp. salt
- 2 tsp. lime juice
- 1⁄4 cup chopped cilantro
Directions
- In a blender or food processor, purée one-third of the tomatoes.
- In a medium bowl, combine tomato purée with remaining tomatoes, onions, jalapeños, chipotle, salt, lime juice, and cilantro. Best if used within 2 days.
