Sautéed Bok Choy

- 2 Tbsp. olive oil
- 2 Tbsp. butter
- 2 bunches bok choy, sliced crosswise into 1" pieces
- 1 clove garlic, chopped
- ¼ tsp. salt
- ¼ tsp. ground black pepper
- In a sauté pan, heat the oil and butter over medium heat until butter is just melted. Stir in the chopped garlic and the raw bok choy. Toss until coated with butter and oil.
- Cover the pan, reduce the heat, and cook for 3 to 4 minutes, stirring occasionally. Uncover the pan and raise the heat to evaporate the moisture. Shake the pan so bok choy does not stick. Add more butter if necessary and season with salt and pepper.
