Sautéed Spinach with Shallots and Garlic

This deliciously healthy side is ready in less than 10 minutes. Baby spinach requires nothing more than a good rinsing. When using larger spinach leaves, wash well, remove tough stems, then chop coarsely.

Ingredients

  • 1 tsp. olive oil
  • 1 large shallot, minced
  • 2 cloves garlic, minced
  • 6 cups fresh spinach, washed well
  • ½ tsp. ground black pepper

Directions

  • Heat oil in a sauté pan over medium heat. Add the shallot and garlic and sauté for 2 minutes. Add the spinach and sauté just until wilted, roughly 3–5 minutes. Remove from heat.
  • Season with pepper and serve immediately.
