Savory Baked Tofu
Savory Baked Tofu makes a great Meatless Monday meal when served on vegetable quinoa or vegetable fried rice.

- 1 package (14 oz.) firm tofu, drained and patted dry
- 1⁄2 tsp. garlic powder
- 2 tsp. curry powder
- 1 tsp. chopped thyme
- 2 Tbsp. extra-virgin olive oil
- Preheat oven to 400°F.
- Cut tofu widthwise into 1⁄2-inch slices.
- Lay tofu in a lightly greased 9-by-13-inch casserole dish. Sprinkle on paprika, garlic powder, and curry powder, thyme, and drizzle with olive oil. Bake 30 minutes.
