Savory Marinated Mushrooms

These mushrooms are great as a simple side with a cold lunch or picnic.

  • 1 lb. assorted mushrooms
  • 1 cup sherry vinegar
  • ½ cup granulated sugar
  • ¼ cup extra-virgin olive oil
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 tsp. chopped fresh thyme


  • Place everything in a small pan except the thyme. Bring to a boil, and simmer for 5 minutes. Then turn off heat and let cool to room temperature. Drain and toss with the thyme.
