Scallion Chive Soup

Chive is a member of the onion family. It adds a sweet, mildly oniony taste to recipes.

  • 3 tsp. almond oil
  • ½ cup shredded zucchini
  • ½ cup chopped shallots
  • 1 clove garlic, minced
  • 1 cup chopped scallions
  • ½ cup chopped chives
  • 2 cups no-salt-added chicken broth
  • ½ cup water


  • Heat oil in a soup pot or Dutch oven over medium-low heat. Cook zucchini, shallots, and garlic in oil for 3–5 minutes. Add scallions and chives and cook for 2 minutes more.
  • Add chicken broth and water. Increase heat to high and bring to a boil. Reduce heat to low and simmer for 5 minutes.
  • In batches, purée soup in blender or food processor, or use immersion blender to blend.
