Scallion Chive Soup
Chive is a member of the onion family. It adds a sweet, mildly oniony taste to recipes.

- 3 tsp. almond oil
- ½ cup shredded zucchini
- ½ cup chopped shallots
- 1 clove garlic, minced
- 1 cup chopped scallions
- ½ cup chopped chives
- 2 cups no-salt-added chicken broth
- ½ cup water
- Heat oil in a soup pot or Dutch oven over medium-low heat. Cook zucchini, shallots, and garlic in oil for 3–5 minutes. Add scallions and chives and cook for 2 minutes more.
- Add chicken broth and water. Increase heat to high and bring to a boil. Reduce heat to low and simmer for 5 minutes.
- In batches, purée soup in blender or food processor, or use immersion blender to blend.
