Scrambled Eggs with Basil
These eggs have a fragrant allure. Serve them for a special brunch.

- 2 Tbsp. butter
- ¼ cup chopped onion
- 4 large eggs, beaten
- 1 tsp. salt
- ½ tsp. ground white pepper
- 2 sprigs fresh basil
- Melt the butter in a medium nonstick skillet over a moderate heat. Add the onions; cook 5–8 minutes, until soft.
- Stir in the eggs, salt, and pepper. Using a wooden spoon, constantly stir the eggs until they form soft, creamy curds; transfer to plates and serve immediately. Garnish with the basil.
