Scrambled Eggs with Basil

These eggs have a fragrant allure. Serve them for a special brunch.

  • 2 Tbsp. butter
  • ¼ cup chopped onion
  • 4 large eggs, beaten
  • 1 tsp. salt
  • ½ tsp. ground white pepper
  • 2 sprigs fresh basil


  • Melt the butter in a medium nonstick skillet over a moderate heat. Add the onions; cook 5–8 minutes, until soft.
  • Stir in the eggs, salt, and pepper. Using a wooden spoon, constantly stir the eggs until they form soft, creamy curds; transfer to plates and serve immediately. Garnish with the basil.
