Semisweet Chocolate Fudge
This fudge comes together quickly. Once the chocolate chips have melted, feel free to stir in chopped nuts.

- 4 Tbsp. butter, divided
- 1 1⁄2 cups sugar
- 1 cup brown sugar
- 1 can (13 oz.) evaporated milk
- 2 packages (12 oz.) semisweet chocolate chips
- 1⁄4 cup light corn syrup
- 2 tsp. vanilla
- Grease a 9-inch square pan with 1 tablespoon of butter and set aside. In large heavy saucepan, combine sugar, brown sugar, and evaporated milk. Cook over medium heat, stirring constantly with wire whisk, until mixture comes to a boil, about 5 minutes. Reduce heat to low. Cook for 10 minutes longer, stirring constantly with a wooden spoon. Then remove from heat and immediately stir in chocolate chips, corn syrup, the remaining 3 tablespoons of butter, and vanilla. Beat until chocolate is melted and fudge is smooth, about 1 minute. Spread into prepared pan and chill until firm, about 3 hours. Cut into 36 pieces (1 inch).
