Semolina Pasta
This fresh pasta needs only a brief 3 to 5 minutes cooking time in boiling water, instead of about 12 minutes for dried pasta.

Ingredients
- 1⁄2 cup semolina flour
- 1⁄2 cup all-purpose flour
- 1⁄2 tsp. salt
- 1 large egg, beaten
- 2 tsp. water
Directions
- Combine flours and salt on a flat surface or in a wide, shallow bowl and make a well in the center.
- Combine egg with water and pour into the well in the flour mixture. Gradually bring the flour into the egg with a fork to form a dough, adding drops of water if necessary.
- When dough has been formed, knead it for 10 minutes. Wrap in plastic. Let rest 45 minutes before rolling with a pasta machine or rolling pin.
