Seven-Minute Frosting

Ingredients
- 2 egg whites
- 1 1⁄2 cups sugar
- 1⁄3 cup cold water
- 1⁄4 tsp. cream of tartar
- 1⁄8 tsp. salt
- 1 tsp. vanilla extract
Directions
- In the top of a double boiler (at the counter), combine all ingredients except vanilla; then beat for about 1 minute with an electric mixer at low speed. Place on the stove over boiling water (in the bottom of the double boiler) and continue beating at high speed for 7 minutes, or until the frosting forms stiff peaks. Remove from the heat and stir in the vanilla, then beat for 2 or 3 more minutes, or until thick enough to spread.
