Seven-Minute Frosting

Makes: 1½ cups


  • 2 egg whites
  • 1½ cups sugar
  • ⅓ cup cold water
  • ¼ tsp. cream of tartar
  • ⅛ tsp. salt
  • 1 tsp. vanilla extract


  • In the top of a double boiler (at the counter), combine all ingredients except vanilla; then beat for about 1 minute with an electric mixer at low speed. Place on the stove over boiling water (in the bottom of the double boiler) and continue beating at high speed for 7 minutes, or until the frosting forms stiff peaks. Remove from the heat and stir in the vanilla, then beat for 2 or 3 more minutes, or until thick enough to spread.
