Shiitake Beet Daikon Sauce

  • 1 small daikon, chopped
  • 1 small beet, chopped
  • 1 cup sliced onion
  • 1 Tbsp. olive oil
  • 1 cup fresh shiitake mushrooms
  • 1 tsp. shoyu


  • In a saucepan, add daikon, beet, and water to cover. Bring to a boil, lower heat, and simmer, covered, until vegetables are soft.
  • In a skillet, sauté onion in oil until translucent. Add shiitakes and sauté until cooked through.
  • In a blender, blend beet, daikon, onion, and shiitake, slowly adding cooking water until desired consistency is reached. Season with shoyu, to taste.
