Shiitake Beet Daikon Sauce
This delectable sauce adds nutritious flavor to greens, grains, and vegetables.

- 1 small daikon, chopped
- 1 small beet, chopped
- 1 cup sliced onion
- 1 Tbsp. olive oil
- 1 cup fresh shiitake mushrooms
- 1 tsp. shoyu
- In a saucepan, add daikon, beet, and water to cover. Bring to a boil, lower heat, and simmer, covered, until vegetables are soft.
- In a skillet, sauté onion in oil until translucent. Add shiitakes and sauté until cooked through.
- In a blender, blend beet, daikon, onion, and shiitake, slowly adding cooking water until desired consistency is reached. Season with shoyu, to taste.
