Shortbread

This basic shortbread recipe can be embellished by adding nuts, ground coriander, cinnamon, candied ginger, or chocolate chips. There’s really no need to though, since these cookies are buttery and divine in their plain form.

Ingredients

  • 8 Tbsp. butter, softened
  • ¼ cup sugar
  • ½ tsp. vanilla extract
  • 1¼ cups all-purpose flour
  • ½ tsp. salt

Directions

  • Preheat oven to 325°F.
  • With a wooden spoon or electric mixer, combine butter and sugar in a bowl and mix until slightly fluffy, but not whipped.
  • Add vanilla; mix well. Add flour and salt. Mix to form a smooth dough.
  • Press dough into an ungreased 9" pie pan, prick all over with a fork, and bake for 20 minutes. Remove from oven and cut into 12 wedges immediately. Leave in pan to cool.
