Shrimp Linguine

Ingredients

  • ½ cup butter
  • ¼ cup olive oil
  • 4 oz. pancetta, cut into 1" pieces
  • 1 clove garlic, minced
  • 1 cup sliced mushrooms
  • 1 lb. cooked shrimp, peeled and deveined
  • ¼ cup grated Parmesan cheese
  • 8 oz. linguine, cooked according to package directions and drained
  • 2 Tbsp. chopped parsley

Directions

  • Melt butter with olive oil in a large skillet. Add pancetta and cook until fat is rendered, about 3 minutes. Add mushrooms and garlic, and sauté until tender. Add shrimp and heat through. Stir in Parmesan until melted. Serve over hot cooked linguine and garnish with parsley.
