Shrimp Noodle Bowl
A simmering bowl of coconut-curry broth will warm you from the inside out and make any afternoon lunch seem brighter.

- 1 package (3 oz.) ramen, flavor packet removed
- 1½ cups seafood broth
- 1 Tbsp. red curry paste
- ½ cup coconut milk
- 1 cup cooked shrimp
- 2 Tbsp. chopped cilantro
- 2 Tbsp. chopped green onions
- Place ramen, broth, red curry paste, and coconut milk in a large saucepan. Bring to a boil, cook 5 minutes, or until tender.
- Transfer to a bowl, top immediately with shrimp, cilantro, and onions.
