Shucos (Guatemalan Street Hot Dogs)

Like many street foods, the magic in these hot dogs come from the variety of toppings. Many people think “con todo” or with everything is the best way to go.

Ingredients

  • 1 1⁄2 cups sauerkraut, drained
  • 1⁄4 cup lightly packed cilantro, chopped
  • 1-2 jalapenos, stemmed, seeded and chopped
  • 2 ripe avocados, pitted and peeled
  • 1 tbsp. lime juice
  • 1⁄4 tsp. salt
  • 6 all-beef hotdogs
  • 6 hot dog buns, toasted
  • Additional toppings like queso fresco, mustard, mayonnaise, ketchup, pico de gallo, or hot sauce, as desired

Directions

  • Heat grill to medium-high heat.
  • In a bowl mix together sauerkraut, cilantro and jalapenos. Set aside.
  • In a second bowl, make guacamole by mashing together avocados, lime juice and salt. Set aside.
  • Butterfly hot dogs by slicing in half horizontally but leaving attached on one side.
  • Grill hot dogs for 7-10 minutes, turning once or twice until hot and lightly charred in spots.
  • To serve, spread guacamole on the toasted buns. Add hot dog and generously top with sauerkraut mixture and other desired toppings.
  • Refrigerate leftovers.
